Viognier, wild fermented on skins to create a beautifully textural and spicy dry white.
Varietal characters of apricot, ginger and honeysuckle characters are dialled right up in this skin-contact white. Aromas of white pepper, freshly grated ginger and orange zest are followed by apricot, toasted almond and generous texture on the palate.
Single vineyard: Mt Pilot Estate (Eldorado). Aged in pre-loved French oak. Unfiltered.
Definitely a wine for food, sling it around with pork and ginger dumplings!
